Running on the Beach and Coffee Breaks

an early morning beach run
happiness
Pure Bliss
sweet simplicity
chatting with family
soft and sweet
the end to a perfect day

I can't say enough great things about the town of
 Encinitas.
 Immediately, I fell in love with the funky beach flair Encinitas had to offer
 ....
 it reminda me so much of Santa Cruz.
 Quickly
 Marc and I established ourselves at a local coffee and tea shop 
called
 Pannikin is located at a historic railroad station
 that has been around since the 60's
 and no wonder locals keep coming back.
 Heaping amounts of pie are offered
 ...
 raspberry, banana cream and chocolate cream pie are a few flavors, 
and 
their coffee is incredible.
 I indulged on Saturday
 and
 ordered a Mexican Mocha that swept me away.
 I love coffee shops with plenty of seating,
 artsy decor
 and
  that have history.
 After a morning run with my cousin's wife Ashley
 it felt incredible to relax with my family at the local coffee shop.
 Do you ever notice that being with close family really makes life complete?!

a cup of tea and ...

enjoying a glimpse of sun (it had been chilly all day)
the birthday girl with her cake ... coconut and marshmallow fondant 
 it was incredible 
and 
her friend made it for her!!

We arrived in Encinitas 
after six hours of driving
and
the first thing we did
was drive Pacific Coast Highway
to admire the views.
We stopped at a roadside cafe (more to come on that later)
grabbed a peppermint tea and a slice of raspberry pie
and
RELAXED.

Road Trip Goodies

Ready For a Road Trip

Hello there sweet friends!!
How are you?
...

My weekend starts tomorrow
and 
I can't even explain how excited I am
but
before I can rejoice
I will have to take care of some business
...
I will be up all night working on a paper.
 I might try to fool you into thinking
I can write a paper while on vacation
 but
 I will be honest
 there is absolutely no chance that will happen
so
I will be drinking tea and writing tonight.

TOMORROW 
however
...
Marc and I are headed to Southern California to visit with family.
 We opted not to fly
 because last minute tickets are quite pricey
 and
 decided to drive.
 I
 actually
 would rather drive if I am well equipped.
 That being said
 I thought I would share with you
 some of my road trip goodies
 because
 every long drive needs goodies.

Road Trip Goodies (in no particular order)
ORANGINA - this is one of my favorite beverages served ice cold there is nothing better

Pop Chips- I was introduced to these little devils a couple of months ago and let me tell you they are dangerous ... incredibly good and not so good for you, that is if you eat the whole bag

PLENTY OF FRUIT- strawberries, apples, dried apricots and bananas ... these are all nice to snack on when I have overdosed on the not so healthy stuff

Chocolate Peanut Butter Pretzels- these are so sweet they sometimes induce a headache 

WATER with lemon - simply refreshing

Turkey Sandwiches with Australian Cheddar and Dijon Mustard - I love making several sandwiches on fresh sourdough bread with plenty of cheddar

And, 
when we hit our destination
a cold Stella and Heineken
will be ready
to enjoy!!
I hope all of you have a great week
and
there are some of you that I still have goodies for
don't worry I haven't forgot
I will be headed to the post office when I get back.

A Weekend Roundup:
Over the weekend 
Marc and I
 visited with friends
 in
 Red Bluff,
 Auburn
 and
 saw
 my mom in Sacramento.
 Our weekend was filled with:
 an outdoor breakfast
 of
 eggs benedict and warm mango tea,
 a dinner in downtown auburn that included
 a blue cheese burger with zucchini fries,
 and
 an afternoon at The Red Bluff Roundup (a rodeo)
 where
 I sipped on homemade lemonade
 made from fresh lemons
that they squeezed right in front of me.
 And, 
to top it all off
we found the
 FUNNEL CAKE STAND.
 Notice the all caps
 I have never enjoyed a funnel cakes as much as I enjoyed them this weekend.
 I enjoyed my funnel cake as is
  with a heaping amount of powdered sugar.
